Enjoy a hands-on chocolate workshop from a passionate chocolate expert! In this class, you'll learn how to temper chocolate, enrobe & roll scrumptious truffles, as well as make mendiants!
The Cocoa Journey Intermediate Level Chocolate Workshop includes:
- a 1.5 hour hands-on truffle-rolling and mendiant-making workshop!
- Demonstration of how to make chocolate, with explanation of chocolate characteristics
- Tasting & bringing your own chocolates home, for yourselves or as a gift!
- Tuesdays and Thursdays, 11:30am-1pm; min. 3 people, max. 9 people, so come with your friends!

Great Tour, Fantastic Chocolates
We had a great tour with Cathy, not only did she take us to taste 12 fantastic chocolates including in some chocolatiers I am sure we would not have found on our, she also told us information about Brussels and made us feel so welcome throughout. A Real Journey
Cathy really does take you on a journey with each tasting. She educates you about the chocolate making process and really helps you to understand the flavors and what goes into each piece of chocolate that you taste. She was also able to share some fun and interesting facts about the city as well. Definitely recommend this tour!

Cathy, a passionate chocoholic born and raised in New York of Chinese parents, discovered gourmet chocolate when apprenticing at Frederic Cassel, President of the prestigious Relais Desserts. Not only did she learn to taste and make delicious chocolate there, she went on to become Chief Chocolate Strategist at Rococo Chocolates in London, then Western European Brand Manager for the B2B blockbuster brand Callebaut, and most recently held a marketing Directorship at Pierre Marcolini, among the best chocolatiers in Belgium and in the world, according to gourmet connoisseurs.
Brimming with chocolate passion, Cathy recently decided to embark on a new journey — by taking visitors like you on Cocoa Journey, a chocolate adventure through Brussels, where you can discover and taste some of the world’s best chocolate, and even make chocolate yourselves!
On the side, Cathy professionally tastes chocolate from around the world as a Judge for the Academy of Chocolate Awards, one of the world's most prestigious fine chocolate awards!
